Destilado de Zapote – Zoquitlan tradition

While on a sourcing trip, we stayed over at the house of one of our warehouse employees. At some point, it was brought to our attention that their neighbor would occasionally make a mango batch during the May mango season. Naturally, we went over first thing in the morning and tried his pure mango distillate the next morning. He only had about 9 liters and did not own his own palenque. He had been making mango distillate for several years/decades as he often could not afford to buy raw agave. Since mango season had passed, we had to wait nearly a year before we could get our hands on his 2022 40 liter batch.

When we returned a year later, we learned that he had also produced a 200-liter zapote batch. We had never heard of a zapote distillate. Zapotes are a tropical fruit found in southern Mexico. There are at least six types of zapote. We can only say that the zapote used in this region has a dark red fruit inside. It was similar to the mango batch he had on hand, but distinct at the same time. The process was identical. To our knowledge, this is one of the first, if not the first, zapote distillate exported to the US.
