Santa Catarina Albarradas has a way of surprising even seasoned mezcal drinkers, and this bottle is a perfect example.
Everardo López Diego, the mezcalero behind our rare clay-pot Cucharillo, also crafts this expression using Sierra Negra — one of the largest agaves used in mezcal production, requiring a full week of roasting in an earthen oven before it's ready. At 1,650 meters in the remote Sierra Norte, Albarradas remains one of the last true strongholds of clay pot distillation, a technique that's been kept alive here for more than three generations.
A Genuinely Unusual Flavor Journey
Where many Sierra Negra expressions lean mineral and resinous, Everardo's version takes an unexpected turn — reviewers have noted it opens with sweet roasted agave, bubblegum, and milk chocolate, before shifting into a distinctly lactic, almost cheesy funk as it airs out. It's a flavor profile that surprises even experienced mezcal drinkers familiar with Albarradas' typical earthy, resinous house style.
What to Expect in the Glass
Expect an evolving experience: sweet and aromatic at first pour, turning progressively more funky and complex with time in the glass, finishing hot, spiced with cinnamon, and unmistakably chocolatey. It's not a one-note sipper — it rewards patience and a second glass.
Why This Bottle Matters
Clay pot mezcal from Albarradas is already rare enough — a batch that manages to surprise reviewers familiar with the region's usual character is rarer still. This is a genuine chance to see just how much variation is possible even within one small, tight-knit mezcal village.
Pair it with our Cucharillo, from the same mezcalero, to compare two very different agaves shaped by the same clay-pot hands.
