We’ve always been a huge fan of Don Goyo’s Espadin featured in Nuestra Solidad. The father-son duo made this Espadin together in preparation for Rodrigo’s Espadin Pechuga batch for the club. Not only does it showcase how amazing the familiar Espadin plant can be, but it allows our club members to compare their recently received Espadin Pechuga to plane Espadin.

Tasting notes:

This is an all-around well-balanced Espadin with herbal aroma notes and more fruity sweet orange flavor notes in the finish. The initial sip really goes up into the nose area with a presence of heat and strongly lingers for some time. The texture is undeniably thick and minerally, making your saliva thicken along the way and leaves you wanting another sip. Flavor notes – sweet peppers mixed with dry fruits

Other:

Compared to the mineral intense and dry lands of Ejutla and the Oaxaca valley region, this Espadín comes from a mountainous land rich with water and moisture in the air. San Baltazar Guelavila, with its many rolling hills and fresh water streams, showcases the impact of the environment on the agave and its final flavors when distilled.
