Destilado de Plum
The mezcalero of October 2019 is back with his signature plum distillate. Unlike agave spirits, these hand-squeezed plums go straight into the fermentation vat without being cooked at all. The wild plums are fermented in plastic and/or clay and then distilled twice in clay pots, providing a wildly unique and fruity expression to try. The plums grow quite quickly and are widely abundant in the more tropical Siera Norte. This is a regional treasure!
Plum Distillate is very comparable to the mango distillate in many ways (viscosity, fruity aroma, balanced) but the plum provides a notably different flavor note. In a small tasting group, half the group preferred the plum to the mango and vise versa. If you like the mango distillate from Jaime, you’ll surely like this plum distillate.
