Santa María Ecatepec sits roughly 5.5 hours from Oaxaca's city center, deep in the Sierra Sur — a remote, mountainous municipality whose name means "mountain air," home to a small population that still speaks Chontal, Zapotec, and Mixe alongside Spanish. It's here, working a craft passed down for generations, that Sergio Martinez Rodriguez makes his mezcal — the same producer behind our rare Chuparrosa.
A Deliberate Bet on a Different Agave
About eight years ago, Sergio began planting his own Pelón Verde agaves — a conscious decision, recognizing that this varietal's flavor profile and biology were fundamentally different from the more common Espadín. Rather than simply harvesting what grew wild nearby, Sergio committed to cultivating an agave he believed had something genuinely distinct to offer.
From Earth Oven to Copper
The agave is cooked in a traditional earth oven, crushed, and naturally fermented before double-distillation in copper — the same meticulous process behind Sergio's other exceptional releases.
What to Expect in the Glass
Expect a mezcal that stands genuinely apart from typical Espadín — savory, green, and herbaceous, with a smoky backbone and soft, candied lactic notes on the finish, and good body throughout. It's an agave with its own clear identity, exactly as Sergio intended when he first planted it.
Why This Bottle Matters
Pelón Verde remains rare outside Oaxaca, and rarer still from a producer who cultivated it by choice rather than convenience. This bottle represents Sergio's belief that not every mezcal needs to taste like Espadín — some deserve their own path entirely.
