One well. One producer. Three completely different agaves.
Papalometl is the third expression from Noel Negrellos Ortega's palenque that we carry — joining his Espadilla and Jabalí — and it might be the most quintessentially "Puebla" of the three. In this part of Mexico, Papalometl refers to a wild agave (related to the Agave cupreata family) that thrives in the northern mountains, distinct from the tobalá that shares the "papalometl" name in parts of Oaxaca.
The Salt Mine Signature
Like everything Noel produces, this Papalometl draws its water from a well located just 15 minutes from one of the oldest salt mines in the Americas — the same mineral-rich water that runs through his Espadilla and Jabalí, giving all three a shared, unmistakable salinity and depth. The agave, matured 8 to 10 years in the wild, is cooked in an earth oven for a full week, crushed by hand with mallet and canoe, fermented in wood vats for up to 12 days, and double-distilled in copper.
What to Expect in the Glass
Expect a rich, aromatic mezcal — roasted agave, warm baking spices, and sandalwood on the nose, layered with orchard fruit: apple, cantaloupe, and strawberry. The palate is thick and complex, often described as creamy with a strawberry-frosting sweetness and a distinct saline, lactic finish — a direct signature of Noel's well water.
