What if the only thing that changed was the water?
That's the question Heladio López Luis set out to answer. Following advice passed down from the elders of Santa Catarina Minas — a village famous for distilling in clay pots rather than copper — Heladio began producing side-by-side batches of the exact same Espadín agave, changing only the water source used in each one. This bottle is the result of that experiment using water drawn from the Tierra Blanca mountain spring, roughly 2km from his palenque.
Santa Catarina Minas: Where Clay Pots Still Rule
Unlike most of Oaxaca, where copper stills dominate, Santa Catarina Minas is one of the last places where mezcal is still distilled almost entirely in hand-formed clay pots — a method that predates the arrival of copper in Mexico and gives the spirit a distinctly creamy, rounded character. Heladio works within this tradition, using an agave grown and harvested locally, cooked in an earth oven, and distilled the old way.

This batch carries a genuinely tropical personality — mango and pineapple up front, with bitter dark chocolate, crushed brick minerality, a spearmint-cool edge, Brazil nuts, and a savory hit of sea salt on the finish. It's a mezcal that manages to be tropical, mineral, and salty all at once — a direct signature of the Tierra Blanca spring itself.
